The Prodigal Son Food Trailer is not your typical food truck. If you’re looking for hot dogs, tacos, or deep-fried desserts, you won’t find them on this menu—but you may be pleasantly surprised by what you will find. Homemade breakfast sandwiches, biscuits and gravy, French toast, and waffle sticks are this food truck’s staples.
“Cooking has always been my passion,” says Prodigal Son Food Trailer owner Ed Pillar, “much like my father, who was also a cook and restaurant manager.” In pursuit of a lifelong dream—and a career that would allow him to spend more time with his family—Pillar established his food truck business in 2021, which he named “Prodigal Son” as a tribute to his Christian faith. “I’ve been truly blessed with this business,” he says.
As you can tell from his menu, Pillar loves to cook breakfast. “And I thought it was a little niche to serve breakfast, because there aren’t many food trucks that do,” he says. He’s come up with a number of unique creations—like his original pancake sandwich, “The Prodigal”—that keep customers coming back for more. “I also have the Prodigal Pancake Stack, which is three sausage patties dipped in pancake batter, then cooked and topped with maple syrup. And for lunch, I have waffle burgers and waffle chicken sandwiches.” Pillar will add ice cream to the menu—served in cones or homemade waffle bowls—as a refreshing treat for the hot summer days ahead.
This weekend, you can catch The Prodigal Son Food Trailer in Morgantown on Friday at the WVU Department of Family Medicine from 9 a.m. to noon, and on Saturday at The Landing at Morgan Pointe from 8:30 to 10:30 a.m.
“I’m pretty much open to going anywhere,” Pillar says. “I’ve set up from Uniontown to Perryopolis and Canonsburg, Pennsylvania—and in West Virginia, from Bridgeport to Fairmont and, of course, Morgantown.” You can always check out the Prodigal Son Food Trailer’s Facebook page to see where it will travel next.
